i was asked to ensure my company has a developer org. i see i can create one via developer.salesforce.com but does this mean i will have a full copy of my production data to test code? or does this mean i need to create a developer sandbox? what does creating a developer org mean (will i be able to see a copy of my company's production data?

I am unable to see all Record Types (I was under the impression that in the case of Process Builder Record Type=objects) when using the Process Builder. Unsure why...I have access to the object and its fields as a System Admin. I can change the actual object so why can't I see the object's label name or API name in the list

Can certain fields be closed for edit for most of the month but be open for edit at certain days of the month? Could Process Builder help me with this?
